From the untamed landscape and wildlife to the classic homestead building and wrap-around deck, Saddles is an iconic Australian restaurant that has put Mount White on the map.
Owner John Singleton set out to create a restaurant that showcases the natural beauty of Mount White, where he resided for more than 30 years. To bring his vision to life, Singleton engaged the acclaimed White + Dickson Architects and Interior Designer, Michelle Leslie, to design a building that seamlessly integrates with the surrounding flora and fauna.
Since opening its doors in 2018, Saddles has been named one of the world’s most beautiful restaurants and has become an Australian landmark, loved by locals and travellers alike.

About the Head Chef
Head Chef Jeremy Pace brings classical French training and extensive international experience to Saddles Mount White. Born and raised in a coastal town in Brittany, France, Jeremy began his culinary apprenticeship at 16 in a local fine dining restaurant, building a strong foundation in traditional technique.
At 22, he joined the three-Michelin-starred Alain Ducasse au Plaza Athénée, refining his craft in one of Paris’s most celebrated kitchens.
Jeremy moved to Australia at 24 to work alongside acclaimed chef Guillaume Brahimi at Guillaume at Bennelong, progressing from Chef de Partie to Sous Chef between 2009 and 2014. He later helped open Guillaume at Paddington before stepping into his first Head Chef role in 2016 at Bistro Guillaume Sydney.
Since then, Jeremy has continued to shape his style in Australia, leading kitchens including Frenchies Brasserie and L'isle de France Terrigal on the Central Coast.
Now as Precinct Head Chef at Saddles, Jeremy applies his refined technique to celebrate the best of Australian produce. With a focus on seasonality, local suppliers and bold, honest flavours, his menus reflect Saddles’ distinctly Australian character - elevated by precision, care and a deep respect for ingredients.
