About the Head Chef
Head Chef Jeremy Pace brings classical French training and international experience to The Homestead. Born and raised in coastal Brittany, France, he began his culinary apprenticeship at 16, building a strong foundation in traditional technique.
At 22, he joined three-Michelin-starred Alain Ducasse au Plaza Athénée, refining his craft in one of Paris's most celebrated kitchens. He moved to Australia at 24 to work alongside Guillaume Brahimi at Guillaume at Bennelong, progressing from Chef de Partie to Sous Chef between 2009 and 2014, before helping open Guillaume at Paddington and taking his first Head Chef role at Bistro Guillaume Sydney in 2016.
Since then, Jeremy has shaped his style across the Central Coast, leading kitchens including Frenchies Brasserie and L'Isle de France Terrigal.
Now Head Chef at Saddles, Jeremy applies his refined technique to celebrate the best of Australian produce.
